Corn Meal Griddle Cakes
4 tablespoons corn meal
3/4 cup boiling water
3/4 cup milk
1 cup all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1 teaspoon baking powder
1 egg well beaten
1 tablespoon melted butter
2 fresh scallions sliced
1/4 cup corn kernels
Add meal to boiling water and cook five
minutes, add milk, stir, add remaining
dry ingredients, mixed and sifted. Add
egg and melted butter, stir in fresh scallion
and corn kernels.
Heat griddle or frying pan over moderate heat.
Use bacon drippings for greasing pan. Pour
batter (use 1/4 cup for uniform size) onto
griddle. Cook until full of bubbles and underside
is nicely browned. Lift with pancake turner or
spatula and brown other side. Serve immediatley
with warm maple syrup.

Lots of telephone ringing, but no picking up! Someone is out surfing the net again...
I remembwer this recipe from the early, broke days of my marriage. A yummy, yet inexpensive and filling meal.
I love anything with corn meal in it.
I take a packaged corn bread recipe, add white whole kernal corn to it, then fry dollops in butter as griddle cakes. Great when it's cold out.
